Sharee's Chicken Salad


Sharee's Chicken Salad

Ingredients:

Chicken

2 ea Chicken Breasts (Boneless, Skinless)
1 T Kosher Salt

Salad

1 T Mustard
2 ea Celery Ribs (Small Dice) 
3 T Black Currants
¼ ea Red Onion (Small Dice)
2 T Sliced Almonds
1 T Apple Juice
1 t Clover Honey
1 T Parsley
½ T Ground Black Pepper

Instructions:


  1. Poach Chicken in 6 cups of salted simmering water, covered for 15 minutes. Cool and chop into ½" chunks. 
  2. Combine all ingredients, including Chicken. Cover with plastic wrap and refrigerate at least 1 hour (best overnight) before serving.

* Serving Suggestion: Serve salad on individual leaves of red endive or
romaine lettuce.
